  • 2 medium Zucchini Spiralized
For the Shrimp
  • 30 pieces Shrimp Peeled and deveined
For the Sauce
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic Finely chopped
  • 2 tablespoons Butter or Ghee Optional
  • 1 whole Lemon Zest and juice
  • 0.25 cup White Wine Can substitute with chicken broth
  • 1 pinch Red Pepper Flakes Optional
  • Salt and Pepper For seasoning
For the Garnish
  • 0.25 cup Parsley Chopped

Method
 

Step-by-Step Instructions
  1. Wash the zucchini, trim the ends, and spiralize to create noodles. Set aside.
  2. Heat olive oil in a skillet and cook shrimp until pink. Transfer to a plate.
  3. In the same skillet, sauté garlic, add butter/ghee, lemon juice, zest, and red pepper flakes. Pour in wine/chicken broth and simmer.
  4. Add zucchini noodles to skillet, toss gently, then add shrimp back. Mix until heated through.
  5. Plate the dish and garnish with parsley. Serve warm.
