Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine shredded zucchini and salt. Allow to sit for 10 minutes.
  3. Drain excess moisture from the zucchini mixture using a kitchen towel.
  4. Mix the drained zucchini with eggs, Parmesan cheese, and half of the mozzarella.
  5. Lightly grease a 9x13-inch baking dish and spread the zucchini mixture evenly to form the crust.
  6. Bake in the preheated oven for 20 minutes until lightly golden.
  7. In a skillet, brown the ground beef and chopped onion over medium heat for 5-7 minutes.
  8. Stir in pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper. Let simmer for 5 minutes.
  9. Spread the meat mixture over the baked zucchini crust.
  10. Top with remaining mozzarella and all of the cheddar cheese.
  11. Bake again for 20 minutes until cheese is melted and bubbly.
  12. Allow to cool for 10 minutes before slicing and serving.
