  • 1 cup Bell Peppers Red and yellow, cut into even strips.
  • 1 medium Red Onion Cut into wedges for roasting.
For the Sauce
  • 1/4 cup Soy Sauce Gluten-free tamari can be used as a substitute.
  • 1/4 cup Pineapple Juice From fresh or canned pineapple.
  • 2 tbsp Honey Or brown sugar, adjust to taste.
  • 2 tbsp Rice Vinegar Apple cider vinegar can also be used.
  • 3 cloves Garlic Minced for best flavor.
  • 2 tbsp Olive Oil To aid in caramelizing veggies.
For Seasoning
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika Try smoked paprika for a different flavor.
  • 1 tsp Chili Flakes Optional, adjust according to taste.
For Thickening (Optional)
  • 1 tbsp Cornstarch Mix with water in equal parts for a glossy sauce.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil.
  2. In a medium bowl, whisk together soy sauce, pineapple juice, honey, and rice vinegar until combined. Heat in a small saucepan for 3-4 minutes.
  3. Pat the chicken thighs dry, coat with half of the sauce, and marinate for at least 15 minutes.
  4. Spread marinated chicken on the sheet pan, add pineapple, bell peppers, and onion. Drizzle with olive oil and sprinkle garlic, paprika, salt, and pepper. Toss gently.
  5. Roast in the oven for 25-30 minutes, flipping halfway to ensure even cooking and color.
  6. In the last 10 minutes, brush remaining sauce over chicken. Broil on high for 2-3 minutes for a crispy finish.
  7. Remove from oven, garnish as desired, and serve warm.
