Step-by-Step Instructions for Peanut Butter Oat Cups
  1. In a medium-sized mixing bowl, add rolled oats, natural peanut butter, honey, and vanilla extract. Stir thoroughly for about 2-3 minutes until well incorporated.
  2. Grease muffin tin with nonstick cooking spray for easy removal.
  3. Divide the oat mixture evenly among the muffin cups, filling each nearly to the top and pressing down firmly.
  4. In a small bowl, combine chocolate chips and coconut oil. Microwave in 30-second bursts until melted and smooth.
  5. Spoon the chocolate mixture over each oat cup and spread evenly.
  6. Sprinkle sea salt on top of the chocolate if desired.
  7. Place the muffin tin in the freezer for about 1 hour to allow the chocolate to harden.
  8. After an hour, pop each peanut butter oat cup out of the tin and store in an airtight container.
